Mexican Meatloaf

This was a big hit at The Greene House tonight! Very Easy!




1 lb. ground beef
1 cup crushed Doritos

1 egg - beaten
1 pkt -taco seasoning
1 1/2 cups shredded colby/jack cheese - divided
1 1/2 cups-salsa divided
1/2 can re-fried beans


Combine first 4 ingredients, 1/2 cup of the cheese, and 1 cup of the salsa.
Form mixture into a loaf and place in a greased loaf pan.
Spread refried beans over the top of the meat loaf.
Drizzle remaining salsa over top.
Bake in 400 degree oven for 50 minutes, or until internal temperature reaches 160 degrees.
Sprinkle remaining cheese on top.
Bake additional 5 minutes to melt the cheese.

  1. Hi Monica! This sounds so good! It actually reminds me of this dish my Mom always made called Tex-Mex. She just browned the ground beef, added the taco seasoning, beans, salsa and topped it with cheese. Then she scooped out a portion to eat with the chips!! Thanks for reminding me! I loved that dish and haven't made it in forever!!

    I read your forgive and forget post. I heard someone say that we may not always forget after we have forgiven, but we can know we have forgiven indeed if we remember the past hurt without feeling any angst or negative emotions. I thought that would probably be true with some of the more severe hurts people must deal with.

    Sure do love what you said and how you spoke from your heart, gal. You're a sweetie!

  4. You know it was actually pretty darn good. In my opinion it is the re-fried beans on top that makes it yummy.

  5. Becky...I'm gonna make that this weekend. We're having a family game night and we will be having chips and dips. Of course I might need to stop by Walmart and get some Beano. lol
